Buffalo Chicken Lettuce Wraps


So I have tried yet another skinnytaste.com recipe. If you have not checked this website out, you need to, you will not be disappointed! All of Gina’s recipes have been fabulous. Some may seem overwhelming due to the list of ingredients, don’t let that deter you. Most of the recipes are pretty easy and VERY tasty. This particular recipe was super easy, I let the chicken cook all day in the crock pot, and then shredded it, and added sauce and it was pretty much done.

Buffalo Chicken Lettuce Wraps (recipe adapted from skinnytaste.com)

4-5 chicken breasts (can be frozen)
Diced onion (about ¼ cup)
1 cup chicken broth
1-2 cloves garlic minced
½ cup franks red hot buffalo sauce
Iceberg lettuce leaves
Carrot sticks (cut match stick thin)

Place chicken (frozen or thawed), onion and chicken broth in crock pot. You may need to add some water for the liquid to cover the chicken breasts. Let cook on high 4-6 hours or low 6-8 hours. When chicken is done, pull from the crock pot and shred. Keep about ½ cup of the chicken broth in the crock pot. After chicken is shredded, place it back in the crock pot with the ½ cup hot sauce and chicken broth. Let it simmer in the crock pot for about 30 min. Serve on an iceberg lettuce leaf, add carrots and blue cheese or low fat ranch for garnish. Enjoy!


I absolutely love Buffalo wings. They are one of my favorite foods, unfortunately my hips, thighs and belly no longer adore them. This was an awesome way to get my buffalo chicken in a healthier way. I also used the crock pot liners for the first time. I think that they were totally worth the money; one thing that I hate is cleaning the crock pot. So I will be using those more in the future for sure!
