I recently had a Girls Night In with some fun food and jewelry making class. I have a friend at work who is incredibly creative and makes jewelry, but that is only one of the many things she does! I wish I had that amount of creativity. I contributed to the class by making some yummy food and a special wintery cocktail. The menu consisted of bean salsa and chips, bacon wrapped little smokies, baked southwestern egg rolls, fiesta ranch dip , oreo and chocolate chip cookie dough truffles and Pomegranate and cranberry martinis. It was all great but, the hit of the night was the chocolate chip cookie dough truffles! They were simply amazing. If you love to sneak some dough while you are making cookies then these are for you! I will be making these again. I have already had requests for them from a few ladies at work who had tried them. I truly enjoy being in the kitchen and being able to have others enjoy what I have made. Baking and cooking has a calming effect on me, not sure why, but I love it!
Chocolate Chip Cookie Dough Truffles
Recipe adapted from Tasty Kitchen
2 ½ C. All -purpose flour
1 tsp. salt
1 cup butter, room temp
¾ C. white sugar
¾ c. Packed brown sugar
1 tsp. vanilla
1/3 cup milk
1 C. mini chocolate chips
14 oz. dark chocolate for dipping
Directions:
Beat butter and sugars in a large bowl until light and fluffy. Add milk and vanilla, mix well. Slowly add the flour and salt and mix on low until well incorporated, stir in chocolate chips, mix well. Cover and chill dough for 1 hour.
When dough is firm enough to handle, roll into 1 inch balls and arrange on baking sheet lined with waxed paper. After balls are made, place cooking sheets in the freezer for 30 minutes to chill.
Melt chocolate in double boiler or in microwave until melted well. Using a fork or dipping tool, dip truffles in chocolate to cover, try to remove any excess coating to prevent large clumps of chocolate at the base of the balls. Place balls back on waxed paper, and chill until chocolate is set. Store in an air tight container for up to one week.
