I seriously have an obsession with Mexican food. I love it, could eat it everyday. If I had to choose any food that I could not live without this would be it. Catch my drift? I LOVE it :) I usually just make tacos at home, sometimes enchiladas but not fajitas. I order fajitas all the time, I just don't think they taste as good at home. I stumble across this recipe on the Internet and decided to give it a try. It has become a staple meal in our house. Phil and I both love them. Phil usually asks me to make them about once a week, so that's saying something :) So I have decided to share this yummy recipe. How nice am I?
Lime Chicken Fajitas
2/3 cup fresh lime juice (about 6 limes, give or take)
8 Tbsp canola oil ( I am sure this converts to some other measurement, not sure what though)
6 minced garlic cloves ( or less if you aren't a fan of garlic like I am!)
1 Tbsp Worcestershire sauce
3 tsp brown sugar
2 tsp salt
1 1/2 tsp black pepper
1-2 jalapenos, seeds removed and diced
handful of cilantro chopped
4-5 chicken breasts (depending on size)
sliced red and orange bell peppers
sliced white onion.
Whisk all ingredients together. Slice the chicken breasts into thin slices, place in zip-lock bag add 3/4 of the marinade mixture, reserve 1/4 for later. Let chicken marinate for several hours.
Heat a large skillet to med-high. Add chicken and cook thoroughly about 5 minutes. Drain excess juice from pan, add your sliced peppers and onions to the chicken and rest of the reserved marinade. Cook until peppers soften and if you like until the chicken is seared well. Serve with fresh salsa on warm tortillas! Yummy :)
