Sorry it has been a while since I have posted anything new, life has been a little hectic lately. I do have lots of new yummy recipes that I made recently that I will be blogging about soon. But here is a new recipe for a chocolate chip cookie I made last night. I usually am a Nestle Toll House kinda girl, but I saw this recipe and decided to give it a try. I actually found this on a on-line birth board I belonged to a few years ago after Burke was born. I loved the site, made a few friends, got some good recipes, good advice from other moms and even a few bargain deals all from that site!
I will warn you, this recipe is a bit different from the norm, but is very good and it makes HUGE cookies if you follow the recipe (I of course am a rebel and varied slightly from the recipe). But the finished project was very good, this may be my go-to recipe for chocolate chip cookies from now on.
Best Big Fat Chewy Chocolate Chip Cookies-via baby center
2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
3/4 cup UNSALTED butter
1 cup packed brown sugar
1/2 cup white sugar
1 tsp vanilla
1 egg
1 egg yolk
1 cup chocolate chips
Preheat oven to 325 and grease cookie sheet or line with parchment paper (aka wax paper) Sift together flour, baking soda and salt, set aside. In a separate bowl, cream together melted butter, brown sugar, and white sugar until well blended (it looked a little weird and oily at this point, but it will come together!). Beat in vanilla, egg, egg yolk until light and creamy. Mix in the dry ingredients until well blended. Stir in chocolate chips with wooden spoon. Drop cookie dough by 1/4 cup (yes, 1/4 cup!) onto cookie pan, spacing at least 3 inches apart. Bake 15-17 minutes until edges are lightly browned. Let sit on cookie sheets for a few minutes after pulling out of oven, then transfer to cooling racks. **I did not use the 1/4 cup to measure out the cookies, I used a very rounded tablespoon. But they may have been a bit better by doing the 1/4 cup, which I will try next time. Also I could only fit about 8-9 cookies on a large cookie pan since they needed to be spaced apart quite a bit.
